Preparation:
1. Season salmon steaks generously with salt and white pepper.
2. Broil lightly; keep warm.
3. Meanwhile, saute onion and garlic in butter until golden; stir in mushrooms, thyme and flour.
4. Blend in tomatoes and wine; cook over low heat until slightly thickened, about 5 minutes.
5. Stir in parsley; taste to correct seasonings.
6. Spoon hot sauce over hot salmon steaks; garnish with lemon slices and additional parsley if desired.
7. Serve with hot cooked rice.
NOTE: Low in calories and tasty. Poached white fish (cod or haddock) can be used in lieu of salmon. |
