Preparation:
1. Sprinkle warm potato halves with onion; pour Tarragon Marinade over all.
2. Cover and refrigerate several hours.
3. Drain, reserving marinade.
4. Arrange salmon, tomatoes, cucumbers and eggs on lettuce-lined platter; sprinkle parsley on potatoes and green onion on salmon.
5. Serve with reserved marinade.
Tarragon Marinade Makes about 1/2 cup
Combine all ingredients in screw-top jar with tight-fitting lid; shake well. |
