Salsa Verde - 3

Ingredients:

1 pound tomatillos -- fresh, peeled
1 medium onion
1 medium jalapeno or
2 medium serrano chiles
2 tablespoons cilantro -- minced
2 medium garlic cloves
1/2 teaspoon honey or alternative
 

Preparation:

Simmer tomatillos in water to cover for 3 minutes. Drain, then coarsely chop with all remaining ingredients in a food processor or blender. Just before serving, thin with water to sauce-like consistency, if necessary. Yields 2 cups.
