Preparation:
Orzo is a type of pasta that resembles rice. Try it in soups, too. Cook and stir ground lamb in 10-inch skillet until lamb is light brown; drain. Stir in tomatoes, celery, orzo, salt and red pepper. Heat to boiling; reduce heat. Cover and simmer about 12 minutes, stirring frequentl until tomato liquid is absorbed and orzo is tender. Serve with yogurt. To Microwave: Crumble ground lamb into 2-quart microwavable casserole. Cover with waxed paper and microwave on high 5 to 6 minutes, stirring after 3 minutes, until no longer pink; drain. Stir in remaining ingredients except yogurt. Cover tightly and microwave 12 to 14 minutes, stirring every 4 minutes, until orzo is tender. Serve with yogurt. |
