Preparation:
Reconstitute tomatoes (soak in cold water about 20 min), cut into 1/8" strips.
Simply sauté‚the red peppers for about 30 seconds, add the garlic, saute 30 sec more, add the tomatoes and mushrooms and sauté‚for 1-2 minutes. Add the green onions and cook for another minute or two and season with salt and black pepper to taste before tossing with pasta. Great quick meal for summer! |
