Pickled Lemons Tetuan (Morocco)

Ingredients:

8 medium lemons -- washed and cut in 8 wedges
3 tablespoons salt
1/2 cup vinegar
1/2 cup salad oil
 

Preparation:

In a 1-quart jar, add the lemons. Cover lemons with water and add other ingredients. Cover jar and shake to mix ingredients. Keep at room temperature for 1 week and then refrigerate until ready to use. Serve with meat and fish or poultry as a relish.
