Ingredients:

tomatoes |

red onions, sliced |

zucchini |

medium |
yellow squash, sliced |

red peppers, roasted and peeled |

clove |
garlic, chopped |
1 |
teaspoon |
salt |
1 |
teaspoon |
pepper |
1 |
medium |
one lemon, juice of |
2 |
tablespoons |
rosemary, chopped |

Preparation:
Grill all vegetables except garlic.
In food processor place all ingredients, except 1/2 cup vegetables.
Process until smooth.
Season with salt, pepper, lemon and rosemary.
Dice remaining 1/2 cup vegetables.
Serve hot or cold with diced vegetables sprinkled on top. |
