Herbed Potatoes On The Grill

Ingredients:

1/4 cup finely chopped celery
3/4 cup butter or margarine melted
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
6 medium potatoes -- unpeeled
1 teaspoon paprika
1 bunch oregano sprigs
 

Preparation:

Sauté‚ celery in butter in a small saucepan until tender. Stir in dried oregano, salt, garlic powder, and pepper. Remove butter mixture from heat, and keep warm. Wash potatoes; cut each into 1/2 inch slices; cutting to, b not through bottom peel. Place a slice of onion between each slice of potato. Place each potato on a square of heavy duty aluminum foil; drizzle about 2 tbs butter mixture over each. Fold foil edges over, and wrap securely. Grill foil wrapped potatoes over medium coals 45 minutes to 1 hour or until potatoes are tender. Unwrap potatoes and sprinkle lightly with paprika. Garnish, if desired.
