Jack's Turkey Burger

Serves: 6 turkey burgers
 

Ingredients:

2 pounds minced raw turkey thigh meat -- no skin
3 tablespoons minced parsley
2 tablespoons dry bread crumbs
1 tablespoon chopped fresh thyme
1 tablespoon dry rub No. 1 -- see * note
1 tablespoon minced onions
6 pieces hamburger rolls
 

Preparation:

* Note: See the "Dry Rub # 1" recipe which is included in this collection. Prepare a wood or charcoal fire and let it burn down to embers. In a large mixing bowl combine turkey meat with next 5 ingredients. Mix thoroughly and chill in refrigerator for at least 2 hours. When ready to grill, form into large patties and grill for 5 minutes on each side or until done. Make sure turkey mixture is cold before grilling. Serve with your choice of condiments.
