Preparation:
Prepare outdoor grill for cooking or preheat grill. With meat mallet or heavy skillet, flatten chicken to 1/4" thickness. In small bowl, combine lime juice, garlic and seasonings; spread on one side of each chicken breast. Place chicken on cooking surface of grill over medium coals or on rack of grill pan; grill 6-8 minutes, turning once. Top chicken with non-fat cheese slice; continue cooking until cheese softens.
To serve, cut bread into 4 sections. For each sandwich arrange lettuce, tomato, purple onion, chicken and 1 tablespoon salsa on bottom half of bread; cover with top half of bread.
