Preparation:
Combine gelatin, sugar, lemon juice, lemon rind, and boiling water in electric blender container. Cover and blend at low speed until gelatin and sugar are dissolved, about 1 minute. Add ice and whipped topping; cover and blend at high speed until ice is melted, about 1 minute. Pour into serving bowl or individual dessert glasses. Chill until set, about 30 minutes. Garnish with additional prepared whipped topping and thin lemon slices, if desired. Makes 4 cups or 8 servings. |
