Molasses-Rum Barbecue Sauce

Ingredients:

2 tablespoons vegetable oil
1 large yellow onion -- diced
2 tablespoons ginger -- minced
2 tablespoons ginger -- minced
1 cup dark rum
1/2 cup red wine vinegar
1 cup ketchup
1/2 cup molasses
1/2 cup brown sugar -- packed
1 tablespoon allspice
1 dash mace
1/4 teaspoon salt and black pepper
 

Preparation:

In a small sauce pan over medium heat, heat oil until hot but not smoking. Add onions and sauté, stirring occasionally, until translucent, 5 to 7 minutes. Add ginger and garlic and sauté, stirring for 1 minute. Add rum, vinegar, ketchup, molasses, sugar, allspice, mace and salt and pepper and bring just to a boil. Remove from heat. Best if made a day ahead of use.
