Preparation:
season breasts generously w/lemon pepper and garlic. microwave breasts carefully-you want them done, but tender. dice into chunks-set aside. in large pot combine: broth, chilies, mayo and sr. cream-simmer 15 min then add chicken-simmer for 15 more. grate cheese (all of it) add a hand full of cheese and the tbsp flour-stir consistantly avoiding lumps-let cool. in 2x4 bake pan-using a laddle: 1 scoop/sm handfl cheese per tortilla. roll until pan is full, pour remaining sauce and cheese on top. bake @ 375 for 30 min.....ENJOY |
