This fruity spiked salsa is perfect with spicy, grilled chicken, fish or pork. | |
Ingredients:

Papaya |
1/4 |
cup |
red onion diced |

Tablespoons |
fresh lime juice |

Tablespoons |
cilantro, finely chopped |
1 |
ounce |
dark rum |

Preparation:
In a shallow bowl, combine all ingredients. Refrigerate at least 1 hour to allow flavors to blend.
I have been known to add a sprinkling of red chili flakes to the salsa. |
