Papaya, Red Onion and Rum Salsa

Serves: 4, doubles easily
This fruity spiked salsa is perfect with spicy, grilled chicken, fish or pork.
 

Ingredients:

1 medium Papaya
1/4 cup red onion diced
3 Tablespoons fresh lime juice
2 Tablespoons cilantro, finely chopped
1 ounce dark rum
 

Preparation:

In a shallow bowl, combine all ingredients. Refrigerate at least 1 hour to allow flavors to blend. I have been known to add a sprinkling of red chili flakes to the salsa.
