Preparation:

In small skillet, heat butter. Add chicken livers and cook over brisk flame for 5 minutes, or until livers are browned. Add chicken broth. Bring to boil. Add "Beurre Manie" and continue cooking for 2 minutes, or until sauce thickens. Meanwhile, make omelet as in "Basic French Omelet." Before folding it, place liver mixture in center. Fold omelet over livers.
Suggested Wine: A light red wine; chilled dry white wine; or a rose wine. |
