Preparation:
Preheat oven to 400°F. In medium bowl, using a fork, combine cereal, flour, sugar, and baking powder. In 2-cup measure thoroughly blend milk, margarine, and egg; add milk mixture to dry mixture and, using a fork, stir to combine (do not overmix or beat). Using a 12-cup non-stick muffin pan that has 21/2" diameter cups* spoon an equal amount of batter into each cup; bake for 15 to 20 minutes (until muffins are browned and a toothpick, inserted in center of muffin, comes out dry). Remove muffins to wire rack to cool.
*If nonstick pan is not available, spray pan with nonstick cooking spray. |
