Preparation:
Mix 1/4 cup flour and cranberries in small bowl. Mix remaining flour (1 3/4 cups) baking powder, salt, sugar and orange rind in a large bowl. Stir in buttermilk, butter and egg into dry ingredients until moistened. Stir in cranberries. Spoon into prepared muffin tins, two-thirds full. Bake at 375 degrees for 20-25 minutes |
