Preparation:
Note: Any chopped dried fruit can be used - I have used apricots with success
Preheat oven to 350 degrees. Line muffin tins with paper liners (I just spray with Pam). Combine oil and sugar. Add the eggs, beating well. Sift the cake meal, potato starch and salt. Combine dry and wet ingredients just until well mixed. Fold in dried fruit. Fill muffin tins 3/4s full. Sprinkle with the cinnamon-sugar mixture. Bake for 45-50 minutes. |
