Preparation:
In medium saucepan, bring orange juice and water to a boil. Stir in rice. Cover. Reduce heat and simmer until rice in tender (about 35 minutes). Beat together eggs, honey, orange zest, salt and milk. Stir in yogurt and hot rice. Pour into 1-quart baking dish. Sprinkle with nutmeg and cinnamon.
This dessert is baked in a hot water bath. To prepare the hot water bath, place baking dish containing the rice pudding in a larger pan or dish. Pour enough hot water into larger pan to fill to within a 1/2 inch of the top of the inner pan. Bake at 350 F. 50 to 60 minutes or until barely set. Cool. |
