Corn Pudding - Quick and Easy

Ingredients:

1/2 cup corn -- (thawed or frozen)
1 large beaten egg white
1/4 cup nonfat milk
1 1/2 teaspoons melted low-calorie margarine
1 tablespoon flour
2 teaspoons sugar
1/8 teaspoon paprika
1/4 teaspoon fresh ground pepper -- to taste
 

Preparation:

Preheat the oven to 375 degrees. Spray a medium ramekin baking dish or small casserole dish with nonstick cooking spray. (You can also use 2 muffin compartments of a muffin tin, but fill the remaining compartments with water before baking.) Combine all the ingredients in a small bowl and pour into the prepared dish. Bake for 30 minutes or until the pudding does not shake when moved and is lightly brown on top. 1 serving
