Preparation:
Combine bread cubes, lemon rind, and salt in a large bowl; set aside.
Combine milk, 1 cup sugar, and butter in a saucepan; place over medium heat until butter melts, stirring occasionally. Pour mixture over bread cubes; let cool. Beat egg yolks and lemon juice; add to bread mixture, stirring gently. Beat egg whites (at room temperature) until stiff peaks form; fold into bread mixture. Spoon into a lightly greased 2-quart casserole; dust with powdered sugar. Bake at 325 degrees for 40 to 45 minutes or until set. Makes 8 servings. |
