Peachy Rice Pudding

Ingredients:

1 1/2 cups reconstituted dried fat-free -- (skim) milk
1 cup instant rice -- plus
2 tablespoons instant rice
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg -- up to 1/2
1/4 cup raisins
1 cup juice-packed canned peaches -- diced
1/4 cup artificial sweetener -- to taste
 

Preparation:

Put prepared milk in saucepan and heat over medium heat until milk scalds, stirring constantly. Add rice, cover, and remove from heat. Wait five minutes, then add vanilla, cinnamon, nutmeg, raisins, and peaches. Mixture will be thin. Cover and let stand for at least 30 minutes or until it thickens. If desired, after mixture cools, add artificial sweetener to taste. 4 servings/Serving size: 3/4 cup
