Preparation:
1. To prepare dressing, in large bowl, combine lime juice, olive oil, garlic and salt; stir to mix well.
2. Add black and cannellini beans, peppers, scallions and cilantro to dressing; toss to mix well.
3. Let stand 30 minutes. Divide lettuce evenly between 12 plates and top each with 1/2 cup beans. Serve at room temperature or chilled. |
