Preparation:
1. Grate enough rind from the grapefruit to make 1 Tbsp.
2. Squeeze out juice and strain through fine sieve to make 3 1/2 cups; set aside.
3. In a saucepan stir together sugar, grapefruit rind and 3/4 cup water until sugar dissolves.
4. Bring to a boil; cook for 5 mintues.
5. Strain through sieve into bowl; let cool
6. Stir in grapefruit juice and pour into shallow metal pan.
7. Freeze for 3-4 hours or until almost firm; break up into chunks and transfer to a food processor. Puree until smooth.
8. Place in chilled airtight container for 1 hour or until firm.
9. Store in freezer for up to 1 day.
Notes: Can also place in an icecream maker. |
