Preparation:
Combine peaches and 1 cup sugar. Stir well and set aside. Beat eggs until frothy. Combine 1 1/2 cups sugar, flour, salt and stir well. Gradually add sugar mixture to eggs and beat until thickened; add milk and mix well. Pour egg mixture into a large saucepan and cook over low heat until mixture thickens about 15 minutes. Remove from heat and set pan in cold water. Stir gently until it cools to room temperature. Stir in cream, vanilla and peaches. Freeze according to freezer directions then let ripen for an hour. Makes 1 gallon. |
