Preparation:
Put the lemon rind into an 8-inch square baking dish. Add the lemon juice
and sugar and stir for 1-2 minutes, or until the mixture is well blended
and the sugar has dissolved. Stir in the cream and continue to stir until
it is completely smooth. Cover with plastic wrap or foil. Freeze for 4
hours or longer until the mixture has set. Do not stir; spoon into
serving dishes. |
