Preparation:
In a blender puree peaches and lemon juice to measure 3 cups puree. Pour into canister of ice cream freezer. In blender add sugar and sour cream; whirl until smooth. Whisk into peach puree. Prepare in ice cream maker, 25 to 30 minutes or longer. When frozen, pour excess water from freezer. Remove crank, wipe off salt from lid. Remove lid and dasher. Cover with foil and replace lid. Pack bucket with rock ice and salt. Cover with heavy blanket and ripen 4 hours.
