Preparation:
Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours. Use within 24 hours. Makes 3 cups.
Notes: This salsa goes nicely with spicy meat dishes. Fully ripe Bosc pears are the best choice for this salsa; they are not only sweet, they have a bouquet that others do not have. Papaya may be substituted for the mango. |
