flounder fillets -- (4-5oz each), cut lengthwise |

Preparation:
1. Preheat oven to 375 oF. Spray 1 quart baking dish with nonstick cooking spray. 2. In food processor, combine shrimp, egg white, zest and juice, chopped dill and onion powder; pulse until smooth. 3. Spread 2 teaspoons of shrimp mixture over skin-side of each flounder fillet. Place a dill sprig along one end of each fillet; roll fillet up, starting at dill end, into a "turban". Secure with toothpick. 4. Place turbans upright in prepared baking dish; cover with foil and bake 15 minutes. Remove foil and continue baking until cooked through, 5-8 minutes. |
