Preparation:
Heat oven to 400 degrees. Lightly butter a 9-inch round or square baking
dish.
To make filling: In same dish combine apples, apricots, raisins, sugar,
cornstarch, and cinnamon. Toss to mix, then spread evenly in dish.
To make topping: Combine baking mix, sugar, and nutmeg; stir in milk to
make dough. Gather dough into a ball and knead 4 times on lightly floured
surface. Pat out to about 1/4 inch thickness. Tear into random pieces
about 2 inches in size.
Arrange pieces like a patchwork on top of fruit, leaving a few holes for
steam to escape. Bake on bottom rack of oven 25 to 30 min. or until bubbly
and lightly browned. Cool to warm before serving.

Homemade dessert seems like a luxury for busy cooks, but this recipe
practically makes itself using a mixture of fresh and dried fruits (no
peeling, less chopping) and prepared baking mix for the sweet biscuit-like
crust. |
