Ingredients:

1 teaspoon sage
4 teaspoons crushed red chiles
3 teaspoons black pepper
1 teaspoon salt
1/2 teaspoon ground thyme
1 teaspoon garlic
1/2 pound lean ground pork
1/4 pound pork fat
 

Preparation:

grind seasonings together in a mini chopper combine minced garlic, ground meat, and seasonings-mix well form into a 6-inch log wrap in plastic wrap chill for 24 hours (may be frozen up to 4 months) remove plastic wrap cut into 3/4-inch slices heat in a dry skillet, until well browned on both sides drain on paper towels serve hot
