Ingredients:

1 medium sausage casings
4 pounds pork butt
2 teaspoons kosher salt
1 tablespoon black pepper
1 tablespoon fennel seed
1 teaspoon crushed red chiles
2 tablespoons garlic
1 teaspoon anise seed
 

Preparation:

prepare casings for stuffing make sure all ingredients and equip are well chilled combine the pork and fat grind through the 3/8-inch plate add the remaining ingredients-mix well stuff loosely into the prepared casings prick with a skewer to remove any trapped air twist or tie off into 3-4 inch links cover and chill for 1-72 hours or freeze prepare as desired
