Preparation:
Preheat oven to 350 degrees. Divide cheese, turkey, onion and cilantro over half of each tortilla. Fold other half of tortilla over, enclosing filling completely. Melt 1 tablespoon butter in heavy large skillet over medium-high heat. Working in batches, cook quesadillas in skillet until brown and crisp, adding remaining butter to skillet as necessary, about 2 minutes per side for each batch. Transfer quesadillas to baking sheet. Bake until cheese melts, about 5 minutes. Cut quesadillas into wedges. Serve with salsa and sour cream.

You can use whatever kind of cheese you like and add whatever you want to the filling, from beans to seafood to vegetables. Personally, I like the following combination of smoked turkey and Monterey Jack cheese. |
