Preparation:
heat oil in a large skillet, 0ver a medium flame add chicken and brown on all sides remove from pan and set aside add onions, bell peppers and garlic heat and stir for 8-10 minutes, until tender combine tomatoes, parsley, basil, rosemary, oregano, thyme, salt, and pepper in a food processor process to blend well pour into skillet, heat and stir for 15 minutes add chicken, cover, and cook over a low flame for 45 minutes, stirring often add mushrooms and olives heat until thickened serve hot, accompanied by pasta or rice |
