Mock Chopped Liver

Ingredients:

1 tablespoons Vegetable oil or water
1 large Onion -- sliced
1 pound Green beans -- trimmed
1 pound Soft tofu
1 teaspoon Paprika
1 teaspoon salt to taste
1 teaspoon Pepper to taste
 

Preparation:

Heat the oil or water in a medium frying pan over medium heat. Cook the onion, stirring occasionally, until soft - about 5 minutes. Steam the green beans over boiling water until just tender, about 10 minutes. Place the onion, beans and remaining ingredients in a food processor and puree until smooth. Transfer to a serving dish and chill for 4 hours or overnight. Serve with crackers or toast. Preparation time, 30 minutes. Chilling time, 4 hours.
