Preparation:
combine eggs and yolks in a mixer bowl beat until light yellow and frothy add cream, sugar, vanilla, nutmeg, and salt-mix well divide mixture evenly between individual custard cups place into a baking pan pour boiling water into baking pan, surrounding custard cups, to a depth of 1-inch bake @ 325 degrees for 30 minutes, until well set remove from oven, cool on a wire rack chill for 4-96 hours sprinkle tops with superfine sugar place into a baking pan pour ice cold water into baking pan, surrounding custard cups, to a depth of 1-inch pass under a boiler to lightly brown tops of cream serve at once |
