Green Rice Casserole

Ingredients:

1 cup uncooked rice
2/3 cup oil
1 medium bell pepper -- chopped
1 medium Onion -- chopped
1/4 cup parsley flakes
1 can evaporated milk
1 cup grated colby cheese
2 cans cream of mushroom soup
2 large eggs
1 teaspoon salt and pepper to taste
 

Preparation:

Mix all ingredients well in 9x13 baking dish. Bake uncovered for 45 minutes to an hour at 350 degrees. You may add extra cheese or 2 lbs of shrimp.
