Ingredients:

sweet potatoes -- cooked and mashed |

skim milk |

egg substitute |

firmly packed brown sugar |

butter or margarine -- melted |

vanilla |

vegetable cooking spray |

lowfat granola -- w/o raisins |

chopped pecans -- toasted |

firmly packed brown sugar |

Preparation:
Combine first 7 ingredients in a bowl; beat at medium speed of an electric mixer until blended. Spoon mixture in to an 8 inch square baking dish coated with cooking spray.
Combine granola and next 2 ingredients; stir well. Sprinkle over casserole and drizzle with butter. Bake at 350 oF for 25 minutes. |
