Preparation:
Cook rice according to package directions, omitting salt; set aside.
Cook peas according to package directions, omitting salt and butter; drain,
reserving 3 tbls. liquid.
Combine rice, peas, and celery; chill. Combine reserved pea liquid,
mayonnaise, onion, lemon juice, salt, and pepper, mixing well. Toss with
rice
mixture. If desired, serve on lettuce leaves, and garnish with pimiento
strips. |
