Ingredients:

2 pounds pork
2 teaspoons salt
1/4 cup hot chile powder
2 tablespoons garlic
2 tablespoons ground oregano
1/4 cup vinegar
1 medium sausage casings
 

Preparation:

Coarsely grind meat with a grinder or food processor combine with remaining ingredients, except casings-mix well stuff loosely into casings remove air pockets by pricking with a needle tie off into 4-5 inch links chill or freeze to store
