Preparation:
combine pork, vinegar, garlic, chiles, bay leaf, salt, cloves, thyme, and sage cover and chill for 2-6 days, stirring occaisionally transfer to a saucepan, over a moderate flame bring to a boil, reduce heat, and simmer for 25 minutes remove from heat and drain well heat oil in a large skillet, over a moderate flame add pork and fry until well browned remove with a slotted spoon to drain add potatoes and fry to the desired consistency drain on a cooling rack and blot with paper towels add pork and fry until heated through remove to drain well arrange in a serving dish serve hot |
