Preparation:
Finely chop onion. Combine onion, mayonnaise, mustard, dill salt and pepper in large bowl. Finely chop hard boiled eggs; stir into mayonnaise mixture. Score cucumber lengthwise; slice into 24 1/4-inch thick slices. Pipe egg mixture onto cucumber slices. Finely chop radishes; sprinkle over canap‚s. Serve on chilled platter.
Tips: Egg mixture can be piped into red bell pepper wedges or celery sticks.
Variations: One small shredded carrot may be substituted for radishes, if desired. Also, 1 can (10 ounces) chunk white chicken - drained - may be either substituted in place of eggs or added to mixture. Increase mayonnaise to 4 tablespoons and add 2 tablespoons milk to mayonnaise mixture. Stir in chopped chicken and proceed as directed. |
