Mock Hollandaise Sauce 2

Serves: 1 cup
 

Ingredients:

3 tablespoons butter or margarine
3 tablespoons flour
1 cup milk
2 large egg yolks -- slightly beaten
2 tablespoons lemon juice
1 teaspoon salt and pepper
 

Preparation:

Heat butter. Stir in flour. Cook for 1 minute. Add milk. Whisk until smooth. Remmove form heat. Whisk in egg yolks. Cook for 1 minute. Stir in lemon juice. Season to taste. Serve with asparagus, broccoli or spinach.
