Preparation:
Cook whole potatoes in boiling salted water until just tender, about 30 minutes. Cool slightly, peel,, and cut into 1-inch cubes. Place in medium bowl. Add water and curry powder and toss to coat. Season with salt and pepper to taste.
In heavy skillet, heat butter over medium high heat. Add shallots, green onions, and reserved potatoes. Cook until potatoes are crusty and golden brown on all sides, stirring occasionally, about 15 minutes. |
