Karens Scalloped Potatoes

Ingredients:

5 medium potatoes -- sliced 1/8 inch thick
1 can cream of mushroom soup
1 can canned milk
1 medium onion -- chopped
1/2 medium bell pepper -- chopped
1 clove garlic -- minced
 

Preparation:

Slice potatoes spray a 9x13 inch pan with pam. Put a layer of potatoes on bottom of pan. On top of the potatoes sprinkle a few onions and bell peppers. Put another layer of potatoes on top of onions and bell peppers. Continue until pan is about 1/2" from being full. Ending with potatoes on top. Mix soup and canned milk and garlic. Pour over potato mixture. Cover with foil. Bake in 350 degree oven for 1 hour. VARIATIONS: you can add leftover turkey, ham or even used canned spam diced up. You can add things like cooked green beans or broccoli or even cheese.
