russett potatoes -- peeled and cubed |

water |

cloves |
garlic -- minced |

skim milk -- (or evaporated skim milk for creamier texture |

tablespoon |
fresh chives |
1 |
teaspoon |
salt and fresh ground pepper to taste |

Preparation:
Combine potato, water and garlic in two-quart microwave safe casserole dish. Cover and microwave on high 11-13 minutes or until potatoes are tender. Stir every 5 minutes. Mash potatoes until smooth. Add milk to potatoes and beat on medium speed with mixer until smooth. Add chives and stir. |
