Preparation:
Place rack in upper third of oven. Preheat oven to 475 degrees. Cut potatoes into thin French fries. In a large bowl with a fork, mix egg white and salt until frothy. Stir in the potatoes and toss until well coated. Remove with a slotted spoon and spread potatoes in a single layer on a non-stick baking sheet. (Or, spray a baking sheet with non-stick coating.) Bake for 15 to 18 minutes or until golden brown and cooked through.
