Preparation:
Since we're on the topic of potatoes, here's an easy recipe, and I'm sure it would freeze just fine. No exact amount because I just slop it together. In a crockpot, put a few (4-5) sliced potatoes, the florets from a head of broccoli, a can of cream of broccoli and cheese soup, and enough milk to make the soup cover the veggies. You can also throw in a handful or two of shredded cheese. Cook on high a few hours. Sorry it's so un-exact, but it's one of those things I just adapt to what I have on hand.
