Preparation:
Scrub potatoes. Slice into french fries. Mix spices with egg whites and toss with potatoes. Spray cookie sheet or heavy pan with Pam. Bake at 425 until well browned, about 30-45 minutes, tossing every 10 minutes or so to coat all sides. Salt lightly, if desired, and serve hot!
Variation: I've made them in a heavy iron skillet, didn't toss them while cooking, let them get well done and stuck together, then turned them over (like a hash brown patty) and continued cooking til well done on the bottom. (When I turned them I sprayed the pan with a little more Pam.) I called this one French Fry Pie. Sprinkled lightly with salt and served with barbeque sauce.
