Preparation:
Preheat oven to 400`F. Drain pineapple slices reserving juice. Cook and peel potatoes; mash in a large bowl. Beat in Wish-Bone Deluxe French Dressing, sour cream, salt, nutmeg, allspice and 1/4 cup reserved pineapple juice. Then, in a small saucepan, combine brown sugar and remaining 3/4 cup pineapple juice. Bring just to a boil, stirring occasionally. Meanwhile, place pineapple slices in a shallow baking dish. Top each slice with a mound of mashed potatoes. Drizzle pineapple syrup over potato-topped pineapple slices and pour remainder into bottom of baking dish. Tuck sliced almonds into top. Bake for 10-15 minutes or until almonds are tipped golden brown. Makes 10 servings. |
